I just thought of this this morning. This is more applicable to wine making than, beer brewing. 1 Step no rinse sanitizer is a peroxide based sanitizer. In wine making, usually metabisulphite is added to the must. Peroxide is an oxidizor; metabisulphite is a reducer. This means they should have a tendency to react with each other, effectively neutralizing each other. Does anyone know if the effect is enough to matter?

1 Step is advertised to be a no rinse sanitizer but it is really better used as a cleaner, then use something else as a sanitizer. With beer, most prefer either Starsan or Iodaphor.

But, there should be so little 1 Step left after sanitizing and draining off the excess, that it should have very little effect on the metabisulphite.
