No banana in my Hefeweizen

So I'm looking for a all grain recipe that Does NOT have a taste of banana flavor in the beer. I have tried many Hefeweizen's and only found one at a brewery that did not have a taste of banana in it. Any idea's, comments, or recipes let me know. Thanks
 
The banana flavor comes from the yeast, typically when it's fermented towards the warm end of its range. So, either choose an American Wheat yeast that minimizes the esters that lead to this or ferment your wheat yeast on the cold side of things. The second method can lead to clove or slightly spicy flavors, if you're into that.

Look up the Boulevard Wheat recipe on this site, it will point you in the right direction.

You could just do an American wheat style with us-05, or if you want a little more yeast character, maybe try a Belgian wit yeast. Hell, just do a wit beer.
 
The colder you ferment a Hefeweizen yeast, the less banana esters you get out of it. But don't go too cold, or they won't ferment enough.
 
If you can get Schneider Weisse bottles and harvest their yeast, it's supposed to lean more towards clove and less towards banana.
 
boulevard wheat is an "american style" wheat supposedly. but their house strain is actually closer to an english ale strain. not quite as clear a flavor profile as american strains, but still definitely not a hefe strain. does lend some tartness to the flavor though.

I do make a clone of hoegaarden and its a great beer but I have been wanting to do a Hefe for a long time but just haven't found a great looking recipe. Thank for the feed back!
