Howdy Moose,

I couldn't make the private message work so I found your post here.
Good morning and welcome to the world of homebrewing.
The forum here is profoundly helpful and will get your questions answered and your enthusiasm up and going.

I ain't never used honey in my brew.
The homebrew supply store has honey.
It is a main ingrediant in beer and ale,
if a bit more expensive.
Honey, in a brew, would be eaten up by the yeast,
turned into alcohol and carbon dixoide, {air}.
There would be no honey flavor,
unless it were introduced in the later stages of the fermentation.
And I have never done that yet.
This is why I have never used honey,
as I am parinoid about not boiling everything minimum 15 minutes.
I will ask old Kelly at the homebrew supply here in Dallas county about honey and get back to ya.
I have been curious about honey too.

Oh, and a batch of brew shouldn't cost more than $20-25.
{Once you get your setup together.} I have only done one 'kit', and think they are crap. Get your setup-setup,
and use 'Liquid' malt extract, or DRIED, hops and yeast.

Mowed the front pasture yesterday
and am planning a brew day today.
