These are my 5th and 6th beers, and by now you would think I would have it down. However, the stress of trying to brew two at once yesterday was a little overwhelming. I tried to space the boils out by about a half hour so I wasnt adding the extracts and trying to avoid boil overs at the same time.........didnt work out too well, I used too small of pot for one of them and the the other, well I forgot when you throw something into the boil (hops) that there is sometimes a quick reaction and the pot boiled over slightly. No biggie, back to the real questions.
1) How much does the hops affect the OG. This is the second time I am using this base recipie but I nearly doubled the amount of hops this time and when trying to do two brews, forgot to take a OG before pitching the yeast. I will give this beer 2 weeks to settle before dry hopping but was wondering if the gravity measurements are going to be different than the original recipe because of all the extra hops.
2) Fermentation seems to be way less vibrant than the previous times. In one carboy I am getting blow out, lots of bubbles and suds spilling into my bucket, but the other one there are bubbles forming but not reaching the neck of the carboy. I can see the yeast "swimming" around but it does not seem to be as active. It is a cream ale and does not have the large amount of hops or any specialty grains which I have never brewed a beer like this before so I am wondering if that is the cause. I had to rig a blow off system with smaller tubes because I forgot to get a regular blow off tube and was concerned, but now I am thinking an airlock would be good enough. What might cause less active fermentation?
I dont like taking too many gravity readings so I was wondering if the final gravity of the beer with a ton of hops would be too much different than the original recipe.
