newb to freshhops

Been brewing AG for a little overa year now, and a guy at work told me he has fresh hops ready, and I just picked about a gallon. They are wilmette and sterling. I will be drying them in a paper bag I guess, dont have a screen. Now what kind of beer would go with them, as they are mixed? I have a lot of reading to do, but don't want to waste them.

I got them on a screen with a fan. They smell great, just need to find a good recipe.
