Just started brewing and getting ready to do my forth batch this Saturday.

Got a few questions.

What commercial brand makes use of biscuit grains?
What is a good commercial creamy ale?
Also, I like good head on my ale. What ingredients promote a good head and good head retention?

That biscuity flavor comes from a few grains. UK malts like Crisp & a couple others. English or English style ales use them. They're also popular with craft brewers over here. Crystal malts & carapils will aid in geting good head.

Creamy beers: My favorite creamy ale is Boddingtons Pub Ale (about which there is much divided opinion). Other good ones include Young's Oatmeal Stout, Left Hand Milk Stout, Lugene Chocolate Milk Stout, Uinta Sea Legs Baltic Porter, and Sixpoint 3 Bean Porter.

I love Fat Tire. I have heard some say that it's most identifiable feature is a biscuit-flavor.

Congratz on homebrewing. . . kiss your money and free time goodbye! Welcome to the forums. This is a good place to get a lot of good information from people that are more experienced (already made that mistake you are contemplating) and willing to save you some trouble.
