These are the ingredients I have on hand and I don't have access to anything else. I kind of got stuck with this stuff and I've already made 3 batches of Caramunich oktoberfests so I would really like to move away from that into something a lot more hoppy but I'm just not seeing it. Maybe you can help!

Hops:
200g/7oz Columbus
125g/4.5oz Southern Passion
125g/4.5oz Cascade

Yeast:
Saflager s-23
Safale us-05

Grains:
5kg/11lbs Caramunich type 2
10kg/22lbs Caramunich type 1
.5kg/1lb Biscuit
.5kg/1lb Melanoidin

Extract:
3.25kg/7lbs Light DME
 
Plug it into an online recipe calculator and play around with the ingredients. Off the top of my head, I'd probably start by steeping 1/2 lb of the cara2,and 1/2 lb of the biscuit. Use your DME and hop her up to your IBU preference.
 
Just throwing this around for a minute in my recipe calc...Extract Im assuming?

7lb DME
.5lb Caramunich I for steeping
.5oz Columbus @ 60
1oz southern passion(Never heard of these but the description is intriguing...) @ 10
1oz cascade @ 10
1oz southern passion @ 0
1oz cascade @0

US05 yeast


Should make for a nice pale ale. You could always skip the Southern passion and just use cascade but the tropical/passion fruit might work well with cascade IMO. Columbus makes a great bittering hops and can actually work pretty well as a flavor/aroma hop as long as you dont go overboard. On a slight side note.....thats a ****load of caramunich malt. Wow.
 
That's a lot of specialty grains! I've never actually made a beer without a base of 2-row, honestly. Plenty of hops, though xD

Oh there was way more even. I originally ordered a total of 3 kg specialty grains along with everything else needed for the 3 extract batches. I didn't even need all that but 1kg was the smallest you could buy. Another guy new to brewing placed the order for me and went to pick it up. We live in Swaziland so we have to go to SA to collect. Well I think he ordered what I wanted but when he got there a new guy was working and said they were out of some things and ended up giving him 25kg of Caramunich 1 & 2. So I've made 3 oktoberfests in a row with grain bills of like 4 lbs Cara 1, 4 lbs Cara 2, with .5lb biscuit and 2.2lbs light dme. And okfests don't use many hops so thats why I'm loaded in that area. My brew pot is only 6 gal and I didn't even have a brew bag until I went back to the States for a month and brought one back along with some more yeast for a couple more batches because I was not going through 55lbs of cara over 3 batches. Maybe its where I'm at and no good beer selections but what we made turned out pretty decent.
