This summer collected several 5 qt containers of Black Berries and Also several 5qt containers of purple grapes (unknown variety but have seeds in them) from my dads garden. Looking to have some idea an putting these together and making a wine. Need an idea about how much sugar etc needs to be added to these to make a wine. Not really a wine drinker myself, but would like to try my had at it.

I haven't weighed the grapes or blackberries, but would like guidence once I do get to the step of that I can place it all in fermentor and get the project started how much I should be shooting for once the are combined.

TIA

I know others will chime in and say to go to Jack Keller's website. http://winemaking.jackkeller.net/

I just started a 5 gallon batch of wine from grapes I got from a good friend. I used 22# of grapes, and about 8# of sugar. You should check the acid levels, to make sure it's not too high. I say this because I also started a batch of wine from wild grapes. The acid level was off the charts. I had to add 3 gallons of water to get it down into the proper range. Then I added sugar into the macerated grapes, and checked the sugar level, to make sure it was high enough for a good wine.

The same goes for the berries, but with them you will have to add in an acid blend to bring up the acid level. I also keep about 12# of berries out, and rack the wine onto them, to try and get more fruit aroma and flavor in the finished wine.

Good luck.

Probably a good idea to first get a hydrometer and they you dont have to ask how much sugar to add, you can easily determine that one yourself. Are these just frozen fruit in quart bags or plastic tubs? How do your grapes taste, strong grapey taste like a concord? Ideally you could crush your grapes and blackberries and only have to add a little sugar to bring the potential alcohol up to like 12%, let them ferment on the skins for about a week and then squeeze them in a fermentation bag to get all the wine out and put that in a carboy and let it finish out. This would be a good mix, blackberry and grapes go well together. If you wanted to get fancy you could even add a little bit of oak. Many yeasts would do this batch well, but K1v-1116 might be the easiest one for you to use. You might want to get a little KM to knock out any bad yeasts at the start and to keep things clean. WVMJ
