alright, so here's my "problem" ...

a local brewery gave me 6 gallons of wort. i threw it into a 6.5 gal pail with no airlock. i need to take off tonight, so i'd like to just put off figuring out the hops, etc. until tomorrow. especially since i'm probably going to have too much liquid for my fermenter (not enough headspace right?). i have a 2.5 gal fermenter that i'll probably have to use.

so before i start rambling too much...here's my basic question..

after you do a mash, is it ok to leave the wort sitting around for a day...can i just rig up an airlock and figure out the rest tomorrow? or is it best that i boil this now?

feel free to give me advice on anything else though.

thanks.

Off the top of my head:

1) The wort you have been given will need to be boiled and "sanitized" when you do your boil, tomorrow. Or put it another way, you are going to have to boil the whole deal tomorrow before you go to the fermenter

2) You have 6G of wort but a 2.5 G fermenter..... How's that gonna work ?

3) Need to think about how you will chill it down to 65 degrees or so to pitch your yeast in, assuming you have some yeast?

Just seems to be some pieces of the puzzle missing here. My primary suggestion is that whatever wort the brewery gave you, you better plan on boiling the shiat out of it before going to a fermenter. And you need to have a slug of yeast ready to go, as well as your hops.

Don't wanna pizz on your parade but these are all things you need to have lined up for this to be successful.

thanks a lot guys.

i'm typing this out quick i probably wasn't clear..i've got it in a plastic fermenter (6.5 gal). i can use that and i've got a couple of smaller fermenters that are about 2.5 gal each.

i've brewed (extract) before, so i understand i'll need to pitch the yeast, etc. i just have never been in this situation, so i didn't know if it'd be cool to leave it lying around for 24 hours.
