Because summer is coming along here real quick I wanted to brew something refreshing, really hopy, and yet with caramel and honey undertones. So hear is what I came up with. I'm using american ale yeast cuz that's what i have in inventory, but I think a british might finish the beer better. Also, should I sub the 2-row for crystal of 20L or 40L? Any other suggestions/blessings would be much appreciated.

These two grains will provide completely different things to the beer.

The crystal will provide color, grain-taste, and non-fermentable sugar.

The 2-row will provide a tad of color, grain-taste, and (a very small amount of) fermentable sugar.

So, I guess it depends on what you want. If you want caramel and sweetness under that load of hops, I'd drop the 2-row and use some crystal.

just my $0.02
