I'm brewing my first California Common. My pre-boil and original gravity readings were spot on with the recipe (1.046 and 1.054 respectively).

Pitched yeast Saturday afternoon in a bucket at 19 C (about 66 F) and got pretty steady bubbling overnight, increased to vigorous bubbling next day.

Now, 4 days later, I've reached my target FG of 1.014 (actually exceeded recipe target of 1.016).

I need advice - I will be leaving my batch unattended for another 10 days due to my personal schedule.

Would it be best to:
- Leave it in primary bucket
- Rack to secondary carboy
- Bottle
- Other???

I have just brewed two batches of this using us-05 and wlp810. The 05 came down to .011 and the 810 was about .014... Both beers are scrumptious but I must say the 05 version was my fave. They were in primary for 14 days each.

If your worried the FG will drop too low then go straight to bottle. That's what I would do...

Two weeks in the fermentor will benefit your beer. Yeast will finish cleaning up any diacetyl and sediments will begin dropping out.
Personally I never go less three weeks.

Never bottle a beer before FG is reached unless you are ready to handle potential exploding bottles.

Thanks. I've decided to leave it for another 10 days. Will bottle on the 19th of July.
