If you're actually real - go work at a brewery a few years in all positions, then decide if you actually want to do it.

It's great to follow your dreams! Opening a brewery is a lot of work, I mean a real lot of work! I don't want to discourage you but look close at all aspects of what it takes besides just brewing beer. Having a large sum of money helps too, unless you know folks with deep pockets.
