I have been working on a house pale ale and finally came up with this recipe and it's exactly what I was looking for. It's a bit hoppy but not so much as it to hide it's malty sweet awesomeness.

5 gallon batch
OG 1.055
FG 1.012
ABV 5.9%
IBU 44
SRM 9.0
Efficiency 71%

Fermentables
9 lb 2 row
2 lb Munich
1 lb Crystal 40

1 pkg S-04 (pitched dry @ 68 degrees)

.75 Oz Amarillo 55 min
.25 Oz Amarillo 40 min
.25 Oz Cascade 40 min
.5 Oz Cascade 20 min
.5 Oz Cascade 10 min

1 whirlfloc 10 min

Primary 3 weeks @ 64F
Cold crash 3 days
Bottle condition 2 weeks

Single infusion mash 60 minutes @ 150

This batch won't last long and I'll be brewing it again.

I have been tweaking this. I made variations of it with Nottingham and US-05. I wanted to try it with a little higher FG and the S-04 accomplished. The other two versions were good, the S-04 version was great. There were also some small changes to grist and hops as well. The bottom line is I couldn't find anything I would change about this version.
