My Kombucha is ready but my scoby is very thin. Help!

So i have made my first batch of kombucha from a mother scoby (which has been at the bottom of the jar for the whole duration) should i empty the jar or let it go sour but let my baby grow? as it is very thin i think itll break. Also i have a tap on the jar so should i drain most of it then pour my cold sweetened tea in or take the scobys out and put the tea in first?
 
I would just make a new batch, add the old scoby and the new into it. Whatever is left in the jar is probably better served as a starter for the next batch ... it'll work its way into a healthier fatter state with time and it actually doesn't matter if they are physically damaged.

(The scoby is cool, but .. you can make Kombucha without them with a solid starter ... I'm not 100% convinced a scoby is 100% necessary but that is whole other topic)
 
Easiest way would be just drain most and add more tea. Continue this until the scoby(s) take up too much room. Then start over using just starter.

As long as you add enough "solid" starter, the "scoby" isn't necessary.
