Ok so I have to admit I've only finished one mead but this one was incredible.
I followed the wildflower mead recipe on the bottom of this page:

And used raw Colorado wildflower honey from

And it was INCREDIBLE. I got a Slovak friend of mine to declare it the best mead he's ever had. (He liked it better than the Slovak ones, which the Slovaks are rather proud of.) Colorado wildflower honey is the best in the world, and it makes incredible mead.
