It as been 11 days since I bottled my Irish Stout. I bottled into 22 oz bottles, but did make 3 12 oz trial bottles.
The idea was to try one of the 3 12 oz trials to see the progress in the carbing and taste. Yes I know it isn't nearly as carbonated as it should be, it didn't get much of a head at all (I knew it wouldn't), but did have a fair amount of carbonation, more than expected.
What I was surprised about was the taste, I drank it at about 66 degrees knowing that it would not taste as good as it would be cold. Man, I was floored. I had to look at the bottle to make sure I made it and didn't grab another brew. The taste was awesome, it was much stronger than I expected (I goofed up the hydro readings and am not really sure of the ABV).
I did this to see progress and of course being it is my first brew, use it as a way to keep me patient. Now I will try the next trial bottle in a week and after that I should be ready for real drinking. I have to set time goals for myself to keep me focused.
