I cut a 5-gallon recipe down for my 1-gallon recipe. I did it with an experienced friend and got technical help when needed.

It was great; my first brewday! It was also pretty simple....BUT

I brewed a Wheat Stout and put it into primary fermentation at 3pm Saturday (1.11.14). The airlock had activity in 1.5 hours (woohoo!) but has now stopped, as of Tuesday morning (1.14.14).

I have read all fermentations are different but 2.5 days??? The primary is in a fermentation bucket so I cannot see well.

Any advice?? Thanks in advance.
 
When the rapid bubbling slows or stops,usually only initial fermentation is done. It'll then slowly,uneventfully creep down to FG. I then give it another 3-7 days to clean up & settle out clear or slightly misty.
 
Okay, I did use a full 11.5 oz US 05 dry yeast packet. More yeast + less wort = quicker fermentation?

I'm still reading up on the science of the process.
