Hey guys, Im excited to be able to post this. I actually brewed it on Monday, but then got called out of the country to Africa on Tuesday. Which kind of worked out perfect, because then ill be gone 3 weeks which is how long it needs to do the pain stakingly long and impatient process of fermenting.

I Love Porters so... I started with a Honey Porter from Midwest Brewing.

So I began the Steeping of my grains

Then slowly added the rest of the ingredients

Until.... After the Honey....

For some reason after I added my 2 bottles of honey... I had to ride the gas flame for boil overs... not really sure why, I was at a constant temp and had 1.5 gallons of empty space in my pot.

But after I got it down and controlled I added my last hops

Once I got it done and off the heat I cooled it in an Ice Bath to around 70 degrees and added it to my Bucket "fermenter"

I started with 4 gallons of water, and after my boil over I only had to add 1.5 gallons of water to bring it up to just over 5 gallons in the fermenter.

Finally came Yeast time.

Now its tucked away in a cool dark spot in my house fermenting while im in a 3rd world country trying the "local beer"

Oh and this is my little helper since my girl was at work!

Any thoughts and opinions would be appreciated!! I just cant wait to get back to it and start bottling!!!!
