It was a one gallon all grain everyday IPA. I know I made a few mistakes along the way. I just kept going forward and drinking a few beers to have a few to fill. Well after I got it in the bottles I remembered that I hadn't stirred the beer before bottling so I emptied out the bottles stirred and rebottled. Now the directions say wait two weeks but I am going to wait 3 becase the Revvy says to and I read his bottling thread. I tasted the uncarbed beer and it does have a kind of green taste with some bitterness but not bad. So now the waiting begins in the mean time I am going to brew up another all grain batch. Yes it was a brooklyn brewery kit it was a gift. I figure I can make some wine or mead once I go to a 5 gallon kit. I figure I will hone my craft on the one gallon and build my all grain rig.

Don't worry about the mistakes, just learn from them and your beer will get better. Congrats!

Sounds like you've got a great attitude. Congrats on your first beer, hopefully first of many!

I just bottle my first brew on Friday. It was the same kit from BBS. I going to try a little at 2 weeks just because I can't wait, but then I will try another at 3. Post how yours turns out. I will be curious to compare how both of ours ended up.

If you can control the urge and only drink one you should have one at a week, one at 2 weeks, one at 3 weeks and the rest starting at week 4. That will give you a good idea of why it is suggested that you wait 3 weeks to start sampling.
