Well, In proud to say I made another small leap in brewing, with my first experimental Brett fermented beer. Decided to try to make an IPA fermented with brett claussenii. Finally enjoying the first bottle today and I am really blown away with the results. Has the characteristic leather aroma, which must have came through during bottle conditioning because it had more of a fruity/pineapple aroma during fermentation. The leather flavor is just very mildly present in the taste and blends perfectly with the hops. Id have to say that this is probably one of the top 5 beers I've ever made and I'm sad I only made a two gallon batch. Anyway, i think I caught the wild bug and will be making some larger batches soon. Here are some pics of the bugs in action and the finished product. Decided to pull the old LBK out of retirement for this small batch haha.
