This is my second iteration, this time at a full-size batch, rather than a 1-gallon trial.

Thoughts/Critiques?

Bought ingredients but had to sub Galena for the Centennial, as my LHBS was out.
 
Another quick question:

Opened my baggies of Simcoe and was getting a little bit of an off smell. Seems like they've gone a little past their date. Am I better off using a slightly old Simcoe, or trying to switch it out for something else? I am brewing tommorow morning, but can run over to the LHBS during the mash and swap them out for something. If I'm better off switching, what would be the best substitute for the above recipe? I was thinking a Falconer's Flight, but I'm open to suggestions if someone has had good results pairing something else with Galena and Amarillo. Any help is much appreciated.
