My best brew day ever 15-11-14
Recipe .5kg biscuit malt, .8kg crystal malt, 4.7kg maris otter malt
Total 6kg grains, mash liquor to grain ratio 3.5kg per 1 Liter so 21L mash liquor.
@ 12:10pm strike at 72C , after doughing in this gave me 67C (a little high).
@ 12:23 SG 1.054 13 brix
@ 12:48 mash temp now 65.5C SG1.063 15.8 brix
@ 1:31 mash temp now 65C SG 1.067 16.2 brix
Drain out gave me 16.5L so about 4.5L left in the grain
Added 18L of sparge at 80degs gave a good stir and left for about 10 mins.
Drain out gave me another 14L so I now have 30.5L for the boil.

@ 2:15 have got a rolling boil and added first hops 35grams citra
The SG is now1.053 13 brix
@ 2:40 SG is 1.055 13.4 brix
@ 2:55 put the cooler into the boil SG is now 1.057 14.1 brix
@ 3:00 added the rehydrated Irish moss
@ 3:10 add second hops 28grams citra SG 1.057 14.1 brix
@ 3:15 add last hops 28 grams citra and turn heat off, leave for five mins.

@ 3:20 turn on the cooler SG1.061 14.6 brix
@ 3:35 its now 50C its alarming watching the sight glass drop as the brew cools.
Sanitise the FV
@ 3:55 its now 25C turn off the cooler
Rehydrate the dry yeast Safale US 05
@ 4:05 open valve and splash the brew into the FV
SG 1.058 14.1 brix take first hydrometer sample reads 1.056 this is my OG
(previous SGs were from refractometer.
@ 4:25 pitch rehydrated yeast into brew, lid on and air lock
24Litres in the FV . Total liquor was 39L so about 15L loss so far
@ 5.02 all washed up
@ 8.00 positive pressure in the FV

My best brew day ever, no major panics, I will have this about 6.5% abv brew ready for xmas
3 weeks in FV, 2 weeks in the bottle ( would have liked a bit longer )

That's really good timing for an AG batch. I struggle to come in under 6 hours, usually 7+ end to end if I forget to do the starter the night before. I just brewed Saturday and had the "brew day from Helles" experience...had to happen sometime, was getting a little too comfortable on my system I think!
