So I used a kit for my first batch.. a heffeweissen

I did a partial mash clone of Newcastle and it turned out tasting like crap.

The third batch I did was supposed to be a partial-mash Wheat Stout.. kind of Chambly Noire-ish. I got help piecing it together from a dunkel weiss recipe from deathbrewer and the guy from my HBS.

I cracked it open yesterday and it is fantastic. Tastes nothing like Chambly Noire.. but tastes a lot like Edmund Fitzgerald porter (which is one of my favorites). I am very pleased. Finally have something that tastes good that is not from a kit.
 
Heres the recipe:

3.3 lbs Wheat Malt Extract
3 lbs Wheat Malt
2 lbs Munich Malt
.25 Crystal Malt 120L
1 oz Spalt Hop Pellets (60 min)
1 oz Argentine Cascade Hop Pellets (60 min)
WLP380 Hefeweissen yeast

** I steeped the grains for an hour before adding the extract.
Let it sit in the primary for 3 weeks.. secondary for a week. Bottles for 2 weeks.

- Im going to start tweaking it so that it will tastes more wheaty.. more like a dark weiss.. maybe cut back on the Munich and add something lighter?

Either way, its good stuff.
 
If it tastes like Edmund Fitzgerald it's gotta be good. That's one of my favorites.

I can't wait to get a few batches under my belt and start experimenting.

I'm only on my second batch (BrewHouse Pilsner) but haven't bottled it yet. My first batch came out ok. Pretty much everyone that's tried it thought it was pretty good. (coopers dark ale kit with LME and some cinnamon)
My 3rd batch will be a partial mash but I'm not sure what to brew. I just hope my pilsner comes out even better than my first brew.
