Muscat Concentrate

So, I'm brewing a DF Midas Touch and will have some Muscat Concentrate left over. I am planing on making a one gallon batch of wine, but I've never made wine before.

Can I get a few suggestions on what yeast to use?

Also, do I need to add anything else or can I just pour in the concentrate and dump in the yeast (after sanitizing of course)

The concentrate needs to be reconstituted first.
