Well, it is my fourth brew and I must say I finally produced one that I am really happy with. It has been my winter hobby I guess the past 3 months, and by god it has been cold in Ottawa this year. Horrible really. I am just doing it the "noob" way and messing with the simple kits. But here is one that really worked. If you use some quality hopps, quality yeast, and quality DME (not corn sugar) it improves the kit drastically. Of course everyone knows this after their first brew or two! Also, I did not rack to secondary for the first time and it is my best beer yet. I will not rack to a secondary for the foreseeable future.

I added ½ ounce US Cascade ½ US Citra to boil for 15 mins. I dry hopped the rest (1/2 ounce of each again) at the one week mark. I used Danstar Ale yeast and Amber DME instead of corn sugar. Wow, big difference in quality, compared to using corn sugar, the yeast that comes with the kits and no hopps.

Anyway I would make this combo again, maybe even with a little more hopp power. Tastes like a legit IPA!
