The only two suitable coil tubing I can find is 3/8" Type L and 1/2" Refrigerator. Which bends easier?
And where can you get Type M? That seems to be the best for price and bending but no one carries it.
 
Refer tubing is "soft" copper, meaning its been annealed, type M and L are rigid pipe. You can make rigid copper into soft by annealing it, which is heating it up red hot and allowing it to cool, but that would be a pain with any serious length of tubing, so just go with the refer tubing.
 
not to be difficult but for the money you'll end up spending in copper just buy a plate chiller a small one is like $65
