I have a rather unique brew on tap now. At 9% ABV, it's kind of a "whoop ass" brew, and is extremely popular with my neighbors. I brewed a 2 gallon batch of a rye wit using 1.5 pounds of wheat and .5 pound of rye. Half an ounce each of Mosaic and Willamette in a "hop decoction" on the side of a no boil no chill brew, boiled the decoction for 5 minutes, for an estimated IBU of 20. Another half ounce of Mosaic was added as a dry hop for 5 days. 2 pounds of invert sugar were boiled up and diluted into half a gallon of syrup. The original brew was made as a 1.5 gallon brew, and the invert syrup was added after a week.
The resulting brew is extremely light with almost no malt character.... in the Bud Light category or so, but with a rich fruity flavor, and a significant perception of sweetness, though it is fully attenuated. It is a brew that you might be tempted to swill down by the pint as a session beer.......but it catches up with you very quickly. A real sleeper, it does not seem highly alcoholic, but one pint will leave you with a pretty strong "buzz". It needs to come with a warning label.
The mistake in this brew was not high enough IBUs to counter the perceived sweetness the alcohol gives it. The next round will be in the 30's or 40's.
Two friends have said "best beer yet"...... But they are BMC junkies.
