Hi!!
I am relatively new to brewing.
Have made 6 extract kits most with steeping grains, all pretty successful. I decided to try mak7ng my own stout recipe based on a bunch I have read. The recipe calculator I used stated am OG 5 gal of 1.051 so I was super suprised when it was actually about 1.070. But I figured that it was kind ofa good thing because I could potentially get a higher abv than originally anticipated. It began to bubble furiously after 12 hours and did so for about 48hrs. It hasnow been just over a weekand my grav is only reading 1.040 (2 readings 24 hrs apart)
, meaning a rather low abv so I am a little sad and unsure what to do next. Is this it or are there more fermentable sugars left and I should pitch more yeast? Any suggestions greatly appreciated.

Here's what I did, there may be some very rookie mistakes contained within as I am a beer rookie, please forgive if I have committed any cardinal sins .
Steep
1/2 lb choc malt

1/2 lb roasted barley

1/2 lb crystal 150



40 min1 gallon , 145F

Rinsed grain bag with 1 gallon 160F

Add 1 gallon or so

4lbs dme cbw golden light

1 can, 3.3lbs muntons irish style stout hopped extract, seemed rather bitter but other than that didn't taste super hoppy.....it had sweetness too....bitterness ebu 37-51?

Extract additions seemed to bring up to almost 4 gallons

Boil 30 min

Boil over danger about three min into rolling boil, stirring and periodic removal from heat for 4 min and it simmered down.
1oz Fuggle hops
Boil 30 min
Ice bath, cooled to 78F within 28min, poured back n forth 3 times to fermentor

During bath rehydrated 2 packets muntons yeast

OG 3 gallons 1.090

Added just under 2 gallons cold water

OG 5 gallons 1.070
 
So after some time on boards I am considering few potential fixes, let me know what you guys think:
Stir it.....do I need to aerate or avoid aerating?
Consider temp, this yeast prefers 64-70F, I am in florida, I use ice packs in water bath for the first 3to5 days to try and keep temps down but this only manages to keep it around 72. Inretrospect I should have chosen a warmer fermeting yeast, any suggestions on particular yeast.
Do I add more sugar?

Not sure here. It should have gone much lower than 1.040, even starting at 1.070

Without putting your ingredients into a calculator, 1.070 seems unlikely with what you listed.

I would start by checking your hydrometer. It should read 1.000 in distilled water.

Sorry, idk y my last post came up again.

I just got my refractometer last week but I checked it upon arrival and again today, it is correct.... I used hydrometer on brew day because i did not have refractometer yet but I am quite sure about the readings on both.......

Is the 1.040 reading with the hydrometer or the refractometer? If it is with the refractometer the SG reading may be off. There are several steps to go through to get an accurate reading with a refractometer.
 
The 1040 was with refractometer. I'll see what hydrometer says tonight.

There is part of the problem. Prior to fermentation, a refractometer works well.
Once alcohol is present, a refractometer reading needs a conversion to give an accurate reading. Let us know what the hydrometer reading is.

Yup, check the gravity with a hydrometer and see how the beer is doing.

While getting a higher than expected OG is not a terrible thing, keep in mind that some recipes are balanced with certain characters and a higher than anticipated alcohol content can make the beer less balanced and palatable. Check your brewing software and nail down your system. After learning to brew, learning to be consistent will help you make fantastic beer. Think of investing in a freezer for fermentation.

Thanks guys. Indeed it was my refractometer inexperience. Hydrometer read 1020, works out to about 7%. Yay!!
Next time I'll pay attn to the brix!!
Gonna let it hang out in fermentor for a few weeks then bottle condition for a month or so. I'll let u know how it turns out.
