About a month ago I boiled the second runnings from a saison and left it outside overnight to collect whatever was floating in the air. The next morning put it into a carboy with an airlock. After a couple days it had a lot of activity and then what appeared to be yeast flocculated to the bottom. 3 weeks later I've got what appears to be white mold in one spot.
