On November 18th I started a pyment (Festa juice white chardonnay) after mixing my honey in and measuring gravity (1.130) I had enough for my 5 gallon carboy and to fill a 1 gallon mason style fermenter. I hydrated a packet of mangrove jack M05 mead yeast with goferm and pitched into both vessels. I checked gravities on Christmas eve, the 5 gallon was at 1.028 and the 1 gallon was at 0.990. I bottled up the 1 gallon and shared it at the table for Christmas dinner, I was very happy it turned out so well. Since then my 5 gallon has only fallen to 1.024 and is still much too sweet for me, I have already tried pitching more yeast and adding Fermaid O with no real success. Last month I started 2 1/2 gallons of mead in some smaller Mason style fermenters (as I seem to be OK with the smaller size) and was wondering if mixing in some of my pyment would/could help finish off the pyment in smaller 'batches' or would I most likely stop the fermentation currently happening in my mead? And if it does stand a good shot at working, what kind of % mix should I be aiming for or just add bit by bit?
 
Blending is a good way to adjust the sweeter mead toward dry and also change flavors.

My caution would be to ensure that your meads are stabilized before you bottle them up. You really don't want fermentation to start again after you blend and bottle. You could end up with exploded bottles, a mess and possible injury.
