Last week, I brewed a batch of Bock. Unfortunately, the yeast was old and did not take off. After 48 hours I pitched a packet of Dry Lager and fermentation started within 24 hours. My OG was 1.064, after 12 days I checked it and it was down to 1.024. I hope it gets down to 1.012 by 1/6/11 so I can brew another batch of the same recipe Bock and pitch on top of the yeast cake. Here is my question: if the gravity doesn't get down to where I want it, has anybody ever mixed two batches of beer after the two of them have gone past the primary stage? My plans are to have a Bockfest all of my own in March.
