I brewed an Oktoberfest several months ago and it has been laagering at about 40*F for almost 3 months. However the FG finished at 1.009 (Shooting for 1.013). It tastes okay but lacks body and maltiness when I sample it. Fastforward to 3 weeks ago when I brewed a Dopplebock. The FG stalled at 1.027 (shooting for 1.020) even after stirring up yeast and bringing to room temp. It tastes good but is slightly too sweet and borderline cloying.
Neither of these situations are that bad, but my question is this: would it be a good idea to mix 2.5 gal of each into my keg? OG for Oktoberfest 1.060. OG for Doppelbock 1.082.
Thoughts?
