Are there mini fridges out there with enough depth & height for a standard 5 gal bucket or glass carboy?
 
Yes lots...You may have to remove door shelving on some though. I bought a old wine cooler fits my new 13gal ferm barrels.

I have a Sanyo that can fit a bucket or carboy with no mods (just remove shelving). It's an older model though. Scored it for $40 on Craigslist which usually has a lot of mini fridges or chest freezers for cheap (at least in my area).
 
I have 4.4 cu. ft. Mini fridge that holds two 3 gallon better bottled with airlock.

That's what I've been using too. Having dual carboys means you can use different yeasts and dry hopping with the same batch too, not that I've done that.

I've got a pilsener in my fridge right now in the twin carboys fermenting at 48f. Using two carboys like this also gives a place to put the temperature probe, in the indentation at the bottom of the two carboys pressed together.
 
I've been thinking about taking one of those small fridges that might hold 2 or 3 gallon jugs and building a ghetto foam enclosure around it. Of course I'd leave the back of the fridge open to vent heat, but I'm betting the fridge is more than capable of keeping a 5 gallon carboy around 50 degrees since it can damn near freeze a couple cases of beer when I ask it to. The only cost would be some foam board and some time since I already have a temp controller.
