I just bottled my first AG batch possibly too early.

It's an AG, 60/40 Wheat that started at 1.052 (mash temp too low). I checked it before bottling and it seemed like it stopped at 1.020. No bubbles, no change in gravity for a few days. Thinking it just didn't completely attenuate, it looked like it was done.

So I proceeded to bottled it using Fizz Drops, BB crowns, and Hoegarden bottles.

I just looked at a bottle behind some light and I see a decent amount of bubble activity. I haven't seen this before, not that I've ever checked that closely.

Should I:
-expect some exploding bottle bombs?
-expect them to be over carbonated?
-cool them down to slow any activity after a few days?
-just roll with it and hope for the best?
 
How long have they been in the bottle? I have not ever seen any visible bubbling activity in a bottle that was not shaken up. You might open a bottle each day over the next few days to monitor the progress. Be sure and have a new sanitized bottle cap ready recap the one you opened, afterwards.
 
Just bottled them yesterday evening. I just shot a video, should be ready in a few.

CO2 is definitely begin produced. Keep a very close eye on them. Check one in a day or so to guage the carb level. You may be putting these in the fridge earlier than planned.
 
I think they are well carbed... see attached picture. I put them in the fridge to slow them down. Hopefully they won't explode in there. I'm also hoping the carbonation will permeate more since they are colder.

The head was good all the way through and it tastes fantastic. Just needs more time in the bottle to smooth out.

I like your glass! Wow, they are definitely carbonated. After 2 days, I would say that you have some possible bottle bombs on your hands. Good call putting them in the fridge to stop any additional carbonation from taking place. Still continue to keep a close eye on them.

Also..Enjoy! You will continue to perfect every batch from here on out, and it should only get better. :mug:
 
Thanks my Wife found those on Amazon. I think they are hand made.

Just a follow up. Needing to free up the bottles for my next batch, a couple of friends and I knocked the m out already. They were definitely bottled too early and were over carbed. Pouring super slow in a larger glass worked out. The ABV was obviously low, but they weren't sweet at all. Thanks for all the advice, glad I caught them before they exploded!
