Hello--Novice dude with a question about floating chamomile flowers in primary for a gallon of chamomile and vanilla mead. 64 oz of honey/ gallon and some Red Star Cuve'. 48 hours after tossing the yeast. bubbles are happening. Everthing is going great. My concern is from reading about melomels where it seems important to "punch the fruit down" to aerate the must and prevent mold and CO2 build up. These flowers are not in a bag and bubbles can squeeze between them. Should I agitate the 1 gallon jug a little during the primary to avoid similar issues? The flowers might sink as the gravity changes but I was just wondering if anyone has had experience with this. Thanks
 
It’s good to agitate during first few days of fermentation. I don’t think you’ll have problem with floaters as long as lid is not opened. They’ll sink after a few days. The co2 will make it safe.
