Hi,
My first ever batch of mead is ready to bottle (I think) It's a traditional dry mead that I pitched last december, secondary in february, tertiary the end of march. Question: Is there any advantage to leaving it there, as opposed to bottling? I plan to give most of it away next Christmas.

Also, it has a very faint sherry note; will that subside with age?

Thanks

Meads take forever to be ready- think years, not months! I would bulk age for a while, then bottle.
If you have a faint sherry note, it could be oxidation. If that's the case, it will only get worse with time. You could rack it into some campden tablets solution to see if that will halt it. I don't know any other way to stop oxidation once it starts.
