So, claphasma and jezter6 and I brewed up 65 gallons of lambic last weekend. Pictures will never do this day justice. In all, 14+ hours of real brewing, 7 hour boil, mashtun failure, kettle screen failure and several skin burns, we ended up hitting our target volume. Special thanks to ADX who stopped by with some good brew for the day:

Here is a shot of all of the mash water vessles, I think in all we had 6-7 going at one time:

At the point of the first turbid, we realized the one mashtun had an issue with the SS braid, and had to bail out half the grist, jack up the tun and replace with a new braid:

Sounds like an ordeal! But those kettles are frakin' AWESOME! I'm sure the suffering was worth it :mug:

I hope all of your battle-scars heal and you end up with an amazing brew!

I'd always heard that for lambics (and other funky beers) you don't replace the angels share due to disturbing the pellicle
 
well wait till MUCH later in to replace the angleshare. that being said, were planning on topping up in about a month.... why would it be bad to disturb the pelicle? wont it just regrow?
 
Sometimes pellicles regrow, sometimes they do not. It is always best to not disturb them once they form.
 
Just saw this. You guys can borrow my gear anytime. hopefully one of these days ill make it down for one (sucks knowing im only about 30 mins away)

I had a good time following on twitter, and via text....almost like being there.
 
Looks like fun.

According to Wild brews you should not top up the angels share.
