So, I'm making a 1 gallon HERMS system (I know, I know, it's kind of a joke, but I want it to be fully functional as well, long story)
Is there any reason why something like this wouldn't work for the mash tun?

Were you planning on actually fitting a drain valve and perhaps a return line for the herms to this .6mm thick vessel?
If so you'd need to be very careful not to tear the metal - definitely would not use a twist drill aside from a pilot hole.

I've seen some horrific things on HBT
