I'm trying to start utilizing my SS conical to its full potential and maintain my own yeast cultures. The Wyeast website states that “Brewers should be able to re-use yeast for at least 7 generations and often as many as 10 generations if good harvesting and storage practices are followed.” Why is this case? If I were to take a frequent house brew and harvest the healthy yeast out of the conical with pristine sanitation, shouldn’t it last forever with proper starters? Thus developing a semi unique strain, due to long period exposure to the same hop and grain bills? What happens after 10 pitches? is it just that, odds are.. something will get infected at this point? Automatic autolysis into 10th generation yeast? hah
