I have an aunt that owns a restaurant and loves the fact that I homebrew. Shes been giving me maple syrup to use in a beer but im having trouble coming up with a recipe. I currently have 1.5 gallons of syrup. Here is my proposed recipe of ingredients I have lieing around. Im open to purchasing new ingredients if it will help.

#1 crystal 60- steep
(I have .5# of caramunich)
(I have caraffa 3)
anywhere from .5-1 gallon of syrup towards end of boil, what do you think?
I have an assortment of spices and sugars.
Hops: I have an assortment of noble hops and i have cascades, centenials, and citras.
Yeast: I was gonna originally make a big dark saison and pour this on a yeast cake of a saison I have brewing, but im thinking about maybe toning it down to a 6 percent or so beer and just getting some US 05.
