Last year I made a batch of cider using 5 gallons of organic apple juice and 1/2 gallon of pure NH maple syrup. I thought it was very tasty, although sweeter than I thought it would be. Of course, I made it in a fit of homebrew stupor and I took no notes... Including my yeast.
This year I'm looking to do it again, and I'm wondering... Any suggestions for a crisp, kickin' cider?
