Does anyone know of a good source to learn and understand all the calculations in brewing. Example, the calculations promash or other software applications use. I do not want to depend only on software, I want to learn the math behind it.

I am reading that one right now. Good book.


Also, start with baseline numbers and assumptions, like 1.25 qt/lb of grain strike water, .6 gt/lb absorption, 9% evaporation, 70% efficiency, etc.

Again, the book is awesome for recipe formulation.
 
I've been meaning to convert the formulas in Daniels' book to an Excel spreadsheet, but by the time I get to it, it's always late and night and I can't do math and drink homebrew concurrently :D

I'll third the notion that Daniels' book is an outstanding resouce. Invaluable.
