Does anyone know of a good source to learn and understand all the calculations in brewing. Example, the calculations promash or other software applications use. I do not want to depend only on software, I want to learn the math behind it.

Designing great beers by Ray Daniels covers most of the pertinent basics. For the real heavy stuff, you'll need to hit the brewing texts.

I am reading that one right now. Good book.


Also, start with baseline numbers and assumptions, like 1.25 qt/lb of grain strike water, .6 gt/lb absorption, 9% evaporation, 70% efficiency, etc.

Again, the book is awesome for recipe formulation.

I've been meaning to convert the formulas in Daniels' book to an Excel spreadsheet, but by the time I get to it, it's always late and night and I can't do math and drink homebrew concurrently

I'll third the notion that Daniels' book is an outstanding resouce. Invaluable.
