Anyone ever made vinegar? Got any tips or resources?

I have made weak vinegar from applewine, just by adding the dregs of organic vinegar to the apple wine, but it is weak. White vinegar is distilled, But, there is no reason to make white vinegar, and I don't want to get all that involved.

I was thinking a nice barley wine vin?
 
I've thought about making malt vinegar before. I know you want to start with unhopped wort though. You can buy a vinegar mother online to throw in after fermentation. Just be very careful of cross contamination. After you have finished the vinegar though you can take out half or more, and put in new unhopped beer to make more vinegar.
 
make sure to cut it at the end. I had an uncut vinegar at like 15% acidity and holy fcuking siht was it a tart guy. Get that acid to around 4% or 5% for a normal tasting vinegar.
