Making candi sugar with date and beet sugars?

I have made candi sugar with regular table (cane) sugar before, using a guide that I found here. My question is, would I be able to use the same process but using Date and Beet Sugars? I just want the candi sugar to taste as close to the real thing, and the sugar in Belgium comes from Beet, and not cane.

fyi cane and beet sugar are chemically identical.

Don't know about the date sugar.
Does the date sugar have a special flavor of it's own? If it does you might just want to use it as is. It could add something interesting to your brew.
 
Hi, I'm wondering if you've tried this. I have some dates drying right now for this purpose.

A point of fact - all beet sugar in the U.S. is made from GMO sugar beets. If it was me, I'd stick to cane sugar, screw the GMO's.
