This is a beer I brewed as a collaboration i been working on of different hopping that turned out simply amazing. It is my second original creation and I think it was the way I did the hop additions during the dry hopping. I am glad to share it with you all! It barely falls into the DIPA category, however if you want a little more abv, just add 1# extra of 2 row.
The SEPN-C's, stands for the 7 hops that was used (simcoe, ekuanot (hbc 366), pacifica, nugget, centennial, cascade and citra)... we will get into those in a second, first the malt bill:
12.10# Pale Malt (2 row) 85.82%
1# Aromatic malt 7.09%
.5# Caramel/crystal 3.55%
.5# Munich (10L) 3.55%
Mash at 152 for 1 hour or until starch conversion is complete
Now the good stuff:
.5oz Nugget at 60 min
.5oz cascade, centennial and simcoe at 15 min
.5oz cascade, centennial and simcoe at 10 min
.5oz cascase, centennial and .75oz simcoe at 5 min
.5oz cascade, centennial and .75oz simcoe at flameout
Let the wort sit at flameout for 15 min before cooling, as a "steep" period
Pitch with starter
ferment for 10 days, then at day 10, add 1oz pacifica for another 4 days
after 14 days, transfer to secondary, and add 2oz eukanot, after 4 days add 1oz of citra, after another 4 days, cold crash for 48 hours then transfer for botteling or keg
total hop count you will need is as follows:
.5 oz nugget
2oz cascade
2oz centennial
2.5oz simcoe
1oz pacifica
2oz eukanot
1oz citra
