Okay, I'm officially a cider convert. I had a pissy day before, during, and after work. So I came home and relaxed by making my wassial cyser.
I modified a recipe previously posed by mgayer.
My version
2 gallons cider
3 lbs local honey
1 zested orange
2 slices ginger
5 sticks cinnamon
Yeast nutrient
Sweet Mead Yeast
When all mixed, it tasted like candied apples and oranges.
I know you're thinking that's too much spice for 2 gallons of cider. But it will be cut 50 - 50 with fresh, unfermented, cider when its served.
Orignally I wanted to make it and have it ready for this year. But to do that, I really should have got it going a months ago. I'm hoping to get enough ABV out of it to be able to celler it until next winter.
