Hey all. I've made a few ciders now and have began experimenting with Mad Millie's cider yeast and Schnapps apple flavouring. I was wondering if any one else has used either this yeast or schnapps flavouring before and how those results compare to my own...
Ingredients
7.5 Ltrs. Juicy Isle Apple Juice, Organic, no preservatives
1 Tin Black Rock Apple Cider concentrate
9 grams Mad Millie Cider Yeast
250 grams corn syrup
500 grams dextrose
100 grams Lactose added day 16
50 ml Apple Schnapps flavouring added day 16
S.G Initial 1053
S.G Final 1008 day 22
Volume 24 Ltrs.
Temp 20 degrees celsius
Tasting notes are from 28 days after bottling
This is the first trial using Mad Millie Cider Yeast and the Apple Schnapps flavouring.
The flavouring profile is fine at start, apple like, but the final tastes/after taste notes are quiet funky and off putting.
The intention of the Apple schnapps was to give off a strong apple aroma, which it does, but this flavour profile has me concerned.
My initial thoughts are that the schnapps flavouring has gone funky over time, but with to directly compare it against, I can not be certain its the schnapps flavouring and not the yeast.
Has any one else ever used the Mad Millie cider yeast or the apple schnapps flavouring ?
