Hey guys,

I am fairly new to brewing, and I'm still doing extract kits. My first few kits have come out great! This time was a little different, though. I was making a wheat beer from an extract kit and ended up with a much lower OG than expected. The recipe was 6 lbs of wheat lme along with steeping 0.5 lbs of both flaked oats and flaked wheat. I added 0.5 oz of cluster hops for 60 minutes of the boil. I boiled about 3 gallons of wort and ended up with just over 2 gallons after the boil.

After cooling I added water to make the final volume 5 gallons. I let it cool down to around 70 degrees and took a hydrometer reading. It came out at 1.033. The expected was 1.044. I took another one about 5 minutes later and got the same thing. I didn't want to have a beer that was so low so I ended up adding about 0.5 lbs of both corn sugar and honey to bring the OG up to 1.046.

While I was boiling, my dad accidentally stopped my timer close to the end of the boil. I am fairly certain that the boil went for about 70 minutes instead of the 60 that was planned. Other than that I cannot think of why my OG would be so low. Any thoughts? Also, what will this beer taste like, and what FG should I expect? I expect it to have less body and flavor, but hopefully still be pretty good as a light summer beer. I used Safbrew WB-06 as the yeast.

Thanks for the help!
