So, having learned from my first meadventure, I am going to try a lower gravity mead this time. I am honestly going to attempt to make something that will be drinkable a little sooner. My question is this; what yeast strain would work well for a low abv mead while still leaving SOME sweetness in the brew? I was thinking about 2lbs honey to 1 gallon hibiscus tea; then secondary over blackberries or strawberries. Any ideas?
 
How soon is sooner?

TOSNA for dry yeast or BOMM generate drinkable mead within 1-3 months, so how soon it's ready depends on how well you prevent off-flavors during fermentation.

For a sweet session mead you'll need to ferment dry, stabilize, and then sweeten.
