I'm a winemaking novice, so I'm grateful for the guidance here.

I currently have a Cab/Merlot blend going. I left it in the primary for 7 days, and the SG dropped like a rock. My recipe called for it to be racked at 1.010, but I racked it to the secondary at 1.000. There was a fair amount of sediment in the bucket, about what I would expect for a primary vessel after 7 days.

After 2 days of sitting in a carboy, there is already nearly an inch of sediment on the bottom. I never would've guessed that so much could fall out in such a short period of time.

Is this normal? Do I need to do another racking to get the wine off the lees right now? I don't want to rack unnecessarily, but also don't want the wine to get funky from the lees.
